Bearnaise Sauce Recipe

Ingredients:
- 2 tablespoons tarragon vinegar
- 1 tablespoon chopped shallots
- 2 tablespoons water
- 3 egg-yolks
- 6 crushed peppercorns
- 100g (4oz) melted butter pinch salt
Steps:
- Combine vinegar, water, salt, peppercorns and shallots in small
saucepan.
- Heat until liquid is reduced to about 2 tablespoons.
- Remove from heat, strain, reserve liquid.
- Beat egg-yolks lightly, stir in strained liquid.
- Place on top of double saucepan over hot water; gradually beat
in the cooled melted butter.
- Beat over simmering water until thickened.
