Bearnaise Sauce Recipe

Ingredients:

  • 2 tablespoons tarragon vinegar
  • 1 tablespoon chopped shallots
  • 2 tablespoons water
  • 3 egg-yolks
  • 6 crushed peppercorns
  • 100g (4oz) melted butter pinch salt

Steps:

  1. Combine vinegar, water, salt, peppercorns and shallots in small saucepan.
  2. Heat until liquid is reduced to about 2 tablespoons.
  3. Remove from heat, strain, reserve liquid.
  4. Beat egg-yolks lightly, stir in strained liquid.
  5. Place on top of double saucepan over hot water; gradually beat in the cooled melted butter.
  6. Beat over simmering water until thickened.
