Beef in Black Bean Sauce Recipe

Ingredients:

  • 1kg (1.5lb) rump steak
  • 1 egg-white
  • 1 tablespoon dry sherry
  • 1 tablespoon soy sauce
  • 2 tablespoons cornflour
  • oil for deep frying
  • 4 shallots
  • 1 red pepper
  • I/3 cup sliced bamboo shoots
  • 2 tablespoons oil, extra
  • 1 teaspoon curry powder
  • 1 tablespoon black beans
  • pinch sugar
  • salt
  • 1 teaspoon water
  • 1 tablespoon cornflour
  • 1 1/4 cups water, extra

Steps:

  1. Cut steak into 5cm x 1 cm strips.
  2. Combine in basin with egg-white, sherry, soy sauce and cornflour; mix well.
  3. Stand 30 minutes.
  4. Deep fry in hot oil until browned; drain.
  5. Chop shallots into 2cm pieces.
  6. Cut pepper into long thin strips.
  7. Mash beans well with a fork, add sugar, salt and water; mix well.
  8. Heat extra oil in large heavy-based frying pan.
  9. Add shallots, pepper, bamboo shoots and curry powder, saute 3 minutes, or until pepper is just tender.
  10. Add bean mixture and meat, saute 2 minutes.
  11. Blend cornflour with extra water, add to pan, stir until mixture boils and thickens.

Serves 4.
