Beef in Black Bean Sauce Recipe
Ingredients:
- 1kg (1.5lb) rump steak
- 1 egg-white
- 1 tablespoon dry sherry
- 1 tablespoon soy sauce
- 2 tablespoons cornflour
- oil for deep frying
- 4 shallots
- 1 red pepper
- I/3 cup sliced bamboo shoots
- 2 tablespoons oil, extra
- 1 teaspoon curry powder
- 1 tablespoon black beans
- pinch sugar
- salt
- 1 teaspoon water
- 1 tablespoon cornflour
- 1 1/4 cups water, extra
Steps:
- Cut steak into 5cm x 1 cm strips.
- Combine in basin with egg-white, sherry, soy sauce and cornflour;
mix well.
- Stand 30 minutes.
- Deep fry in hot oil until browned; drain.
- Chop shallots into 2cm pieces.
- Cut pepper into long thin strips.
- Mash beans well with a fork, add sugar, salt and water; mix
well.
- Heat extra oil in large heavy-based frying pan.
- Add shallots, pepper, bamboo shoots and curry powder, saute 3
minutes, or until pepper is just tender.
- Add bean mixture and meat, saute 2 minutes.
- Blend cornflour with extra water, add to pan, stir until mixture
boils and thickens.
Serves 4.
