Beef Goulash Recipe

Ingredients:

  • 1.5kg (2lb) round or chuck steak
  • 2 large onions
  • 1/2 cup flour
  • 2 tablespoons oil
  • 1 tablespoon tomato paste
  • 50g (2oz) butter
  • 1 tablespoon paprika
  • 1 cup water
  • 1 bayleaf
  • 1 beef stock cube
  • salt, pepper
  • 1 cup dry red wine
  • 250ml (10oz) carton sour cream

Steps:

  1. Trim steaks to remove all fat, cut meat into 2cm cubes.
  2. Toss in flour seasoned with salt and pepper.
  3. Heat oil in large saucepan,
  4. add butter.
  5. Add meat and brown well on all sides.
  6. Add paprika and chopped onions, brown lightly.
  7. Add water, wine, undrained tomatoes and all remaining ingredients except sour cream.
  8. Cover, simmer gently 1.5 to 2 hours or until meat is very tender.
  9. Add sour cream and heat gently; do not allow to boil or mixture will curdle.

Serves 6.
