Beef Vindaloo Recipe

Ingredients:

  • 800g (2lb) topside or round steak
  • 2 large onions
  • 3 cloves garlic
  • 2 red chillies
  • 1 teaspoon turmeric
  • 2 tablespoons curry powder
  • 1 teaspoon ground ginger
  • 1/4 teaspoon dry mustard
  • 1 teaspoon cardamom
  • 1 tablespoon vinegar
  • 1 teaspoon chopped mint salt
  • 12g (1/2oz) butter
  • hot water

Steps:

  1. Place 1 chopped onion, 1 crushed clove garlic, 1 finely chopped chilli, ginger, 1 tablespoon curry powder, vinegar and salt into a bowl.
  2. Mix well together.
  3. Cut beef into 2.5cm cubes,
  4. add to mixture in bowl.
  5. Mix thoroughly and allow to stand at least 3 hours.
  6. Melt butter in frying pan and fry the remaining chopped onion, crushed garlic and chopped chilli until light brown.
  7. Add turmeric, remaining curry powder, mustard, cardamom, and meat mixture.
  8. Cook 5 minutes, reduce heat to simmer, add sufficient hot water just to cover the meat; add salt to taste.
  9. Cook gently, covered, until meat is tender, approximately 1 hour 20 minutes; add a little extra water, if necessary, during cooking time.
  10. Lastly add mint. Serve with hot rice.

Serves 4.
