Mushroom Sauce Recipe

Ingredients:
- 1 oz. butter
- 1 tablespoon chopped parsley
- 2 teaspoons oil
- 4 shallots
- 1 chicken stock cube
- 4 oz. mushrooms
- 1/2 pint water
- 1 tablespoon tomato paste
- 2 teaspoons flour
- salt, pepper
Steps:
- Heat butter and oil in pan.
- Add finely chopped shallots and sliced mushrooms,
- Sauté slowly 5 minutes.
- Stir in flour, tomato paste and crumbled stock cube;
- Gradually add water, stir constantly until mixture boils and
thickens.
- Season with salt and pepper.
- Boil 2 minutes, reduce heat and simmer very slowly for 15
minutes, or until sauce is rich dark colour.
- Stir in parsley.
