Mushroom Sauce Recipe

Mushroom Sauce Recipe

Ingredients:

  • 1 oz. butter
  • 1 tablespoon chopped parsley
  • 2 teaspoons oil
  • 4 shallots
  • 1 chicken stock cube
  • 4 oz. mushrooms
  • 1/2 pint water
  • 1 tablespoon tomato paste
  • 2 teaspoons flour
  • salt, pepper

Steps:

  1. Heat butter and oil in pan.
  2. Add finely chopped shallots and sliced mushrooms,
  3. Sauté slowly 5 minutes.
  4. Stir in flour, tomato paste and crumbled stock cube;
  5. Gradually add water, stir constantly until mixture boils and thickens.
  6. Season with salt and pepper.
  7. Boil 2 minutes, reduce heat and simmer very slowly for 15 minutes, or until sauce is rich dark colour.
  8. Stir in parsley.
