Mustard Sauce Recipe

Ingredients:
- 1 tablespoon brown sugar
- 1 teaspoon dry mustard
- 1 egg (separated)
- 1 1/2 tablespoons chicken stock or water
- 1 1/2 tablespoons white vinegar
- salt, pepper
Steps:
- Combine sugar, mustard, and lightly beaten egg-yolk over hot
water in the top of double boiler.
- Stir until combined; stir in stock and vinegar; season with salt
and pepper.
- Remove from heat.
- Beat egg-white until soft peaks form and fold into the cooling
sauce.
- Return mixture to top of double boiler and stir gently over
moderate heat 3 minutes.
