Tomato Sauce Recipe

Tomato Sauce Recipe

Ingredients:

  • 2.5kg (6lb) firm ripe tomatoes
  • 2 medium onions
  • 5 medium green apples
  • 3/4 pint white malt vinegar
  • 2 tablespoons salt
  • 1 1/2 lb. sugar
  • 1/2 teaspoon pepper
  • pinch cayenne pepper
  • 1/4 cup lemon juice
  • thinly peeled rind 1 lemon
  • 1 teaspoon whole cloves
  • 1 teaspoon whole allspice
  • 1 teaspoon chopped green ginger

Steps:

  1. Chop roughly tomatoes, peeled onions, and unpeeled cored apples.
  2. Put in large boiler, cover, bring slowly to boil; reduce heat, simmer gently 30 minutes or until tomatoes and apples are soft and pulpy.
  3. Allow to cool slightly, then press tomato mixture through sieve.
  4. Return sieved mixture to boiler, add vinegar, salt, sugar, pepper, cayenne pepper, lemon juice and rind.
  5. Put allspice, cloves, and ginger in muslin bag, add to tomato mixture.
  6. Bring to boil, stirring until sugar is dissolved, then boil gently, uncovered, 14 hours.
  7. Cool, remove muslin bag and lemon rind. Pour into sterilised jars or bottles; seal.

Makes approx. 3 pints.
